- 1 onion
- 100 g cooked beetroot
- 150 g bread for dumplings
- 2 eggs
- 20 g flour
- 1 small bunch of parsley
- Salt
- Butter for sautéing
- Butter for garnishing
- Parmesan cheese
Preparation
- Dice the onion and sauté in 1 tablespoon of butter.
- Add the onion to the bread cubes.
- Boil the beetroot, peel and chop into pieces. You can also buy pre-cooked beetroot.
- Mash the beetroot with the eggs and add to the breadcrumbs.
- Add the flour and chopped parsley and season with a generous pinch of salt.
- Mix everything together with your hands, but do not knead.
- Cover the dumpling mixture and leave to rest for 15-20 minutes.
- Shape the dumplings and cook in salted water for 15 minutes.
- Garnish with melted nut butter and Parmesan cheese and enjoy.
Tips
- We like to serve coleslaw as a side dish.
- The raw dumplings can be frozen.
- Once cooked and covered, the dumplings will keep in the fridge for about 2 days. If they smell or look unusual, it’s best not to eat them.
- Also delicious: slice the leftover dumplings and fry them in butter.
